Thai Kisuri (Khao Tom) Recipe
Ingredients:
Basmati or fragrant rice – 1 cup
Chicken/beef mince/shrimp – 200 grams
Chopped garlic – 1 tablespoon
Chopped ginger – 1 teaspoon
Chopped onion – 2 tablespoons
Salt – to taste
Soy sauce – 1 tablespoon
Fish sauce – 1 tablespoon
White pepper powder – 1 teaspoon
Chopped green onion – 2 tablespoons
Chopped coriander – 1 tablespoon
Lemon juice – 1 tablespoon
Water or chicken stock – 5 cups
Boiled egg (optional) – for serving
Fried garlic (for garnish) – 1 tablespoon
Preparation method:
1. Cooking rice:
1. Wash the rice and boil it in 5 cups of water until it becomes soft (it will be a bit thick like khichdi).
2. Stir occasionally during cooking so that the rice does not stick.
2. Cooking the meat:
1. Heat a little oil in a pan and add the chopped garlic, ginger and onion.
2. Add the meat (minced or shrimp) and fry with salt, soy sauce, fish sauce and pepper powder.
3. When the meat is well cooked, mix it with the boiled rice.
3. Serving:
Serve the Thai kisuri in a hot bowl.
Sprinkle green onions, coriander leaves, fried garlic and lemon juice on top.
You can serve with boiled eggs or chili flakes if you want.
Bonus tips:
You can use shrimp instead of minced chicken or beef.
Use chicken stock for more flavor.
